In New York, he was fortunate to commence his career in such 4-star restaurants as Il Gato Pardo, Three Scalini, and Vivolo, where he served as an executive Chef.
Upon arriving in Florida he came to be recognized as executive chef and former founder of various prominent Italian restaurants. Among those include Il Paparazzi, Giacosa, Cafe Ragazzi, and Emilio's Casa Toscana.
Now, Chef Di Carlo is pleased to present his newest venture to the residents of South Florida with Emilio's Trattoria, featuring fine Tuscan Cuisine. Located in one of the most charming and stunning areas of Miami, Bay Harbor Island. Emilio's Trattoria will captive every customer with a variety of authentic Italian Tuscan dishes.
